Maximillian Petty, a three-time James Beard Award semifinalist, has assumed the role of Executive Chef at The SOMM Hotel & Spa in Woodinville, Washington, marking a significant leadership shift in the Seattle-area fine dining landscape. The hotel, which opened in September 2025, represents Petty's return to his hometown after a decade leading Eden Hill, the acclaimed Seattle restaurant he founded in 2015.

Petty spent a decade building Eden Hill's reputation on inventive Pacific Northwest cuisine before departing in 2025. His tenure there earned national recognition and established him as a significant culinary voice in the region. The SOMM Hotel & Spa, situated roughly 25 minutes from downtown Seattle in Woodinville's wine country, has recruited him to lead its culinary operations and shape its dining identity.

Bin 47, the property's signature fine dining restaurant, now serves as the centerpiece of Petty's vision. The restaurant operates multiple service formats, including à la carte brunch, lounge, and dinner menus alongside "The Summit," a 16-course tasting menu that changes regularly. Recent offerings demonstrate Petty's approach to ingredient-driven cooking: Dungeness crab roll with green curry and foie fat brioche, aged tuna tartare with truffle egg jam, porchetta di testa with fennel and green apple salad, feta stuffed gnocchi with salsa macha labneh, and fried whole rockfish with wild garlic and red chili anchovy caramel.

The hotel's name carries dual meaning within Petty's philosophy. While "SOMM" references sommeliers—a nod to the wine country location—Petty has framed the acronym as standing for "sense of magic and meaning," a principle he applies to menu development and guest experience. This conceptual framework underscores his commitment to local sourcing, seasonality, and what he describes as innovative culinary storytelling.

The opening of Bin 47 positions The SOMM as a dining destination beyond its hotel amenities, particularly as luxury hospitality brands increasingly emphasize restaurant quality as a competitive differentiator. For Petty, the move represents a consolidation of his influence: rather than operating a standalone restaurant, he now shapes culinary strategy across a full-service hospitality property.
