Park Hyatt Aviara Appoints Michelin-Trained Chefs to Lead Dining Expansion
The Carlsbad resort adds William Eick and Jorge Saldana as chefs de cuisine and expands sushi service to seven nights weekly at Pacific Point.
Park Hyatt Aviara Resort, Golf Club & Spa has appointed William Eick and Jorge Saldana as chefs de cuisine and expanded its sushi program, signaling a strategic move to strengthen its culinary positioning in the competitive coastal resort market.
Eick, owner of Matsu in Oceanside, will lead Pacific Point, the resort's ocean-view restaurant, where he will partner with Sushi Chef Meljohn Sebastian to oversee a Japanese and Asian-inspired menu built around seasonal ingredients. The restaurant now operates its sushi service seven nights a week, up from a limited schedule. Matsu has won San Diego Magazine's Best Japanese Restaurant award for four consecutive years since its opening in Fall 2021. Eick, a Bay Area native with more than 15 years of professional experience, previously operated Mission Ave Bar and Grill and has collaborated with chefs including Dominique Crenn, David Breeden, Jon Yao and Ron McKinlay across multiple Michelin-starred kitchens.
Saldana, a San Diego native, assumes the role of Chef de Cuisine at Ponto Lago, which features a Baja-inspired menu. He brings 15 years of experience from acclaimed establishments including Le Coucou, a one-Michelin-star restaurant in New York City, where he worked under Chefs Daniel Boulud and Daniel Rose. Saldana subsequently cooked at 7908 Supper Club in Aspen and Bruto in Denver, a one-Michelin-star restaurant under Chefs Byron Gomez and Kelly Whitaker. His culinary approach emphasizes technique and collaborative kitchen culture.
The appointments complement the resort's existing culinary leadership. Chef Richard Blais oversees Ember & Rye, while Executive Chef Jonathan Bautista, a James Beard semifinalist, leads the broader program. The resort also appointed Executive Pastry Chef Sylvain Piffeteau, who trained under Nicolas Bernarde, named Best Pastry Chef in the World 2005 in France, and led pastry programs at the Pendry West Hollywood and Fontainebleau Las Vegas.
Park Hyatt Aviara recently completed a property-wide transformation exceeding $60 million, which refreshed all 327 guestrooms and suites and introduced multiple dining concepts. The resort operates five distinct dining destinations and sits on more than 250 acres adjacent to the Batiquitos Lagoon. It holds AAA Five Diamond status and houses an Arnold Palmer signature golf course, Topgolf Swing Suite, and Miraval Life in Balance Spa Aviara.
The chef appointments reflect intensifying competition among luxury resorts to differentiate through culinary programming and recruit established talent from the independent restaurant sector.
